Ingredients

  • 4.6 oz boiled beetroot
  • 1.5 cups semolina flour
  • 9.9 oz ricotta
  • 1/4 cup grated parmesan
  • 1 sprig thyme
  • 4 tbsps extra virgin olive oil
  • 2 tbsps butter
  • 2 tbsps parmesan
  • 4 leaves sage

Steps

  • For convenience and just for convenience, I bought pre-cooked and vacuum-packed beetroot, which is available in all supermarkets and greengrocers, an excellent product that helps and facilitates us in the kitchen. I put it in the blender and reduced it to a pulp.

  • For this preparation, I used semolina flour, which makes the fresh pasta more rustic. I placed the flour on the cutting board and in the center the pureed beetroot.

  • Work the two ingredients, adding flour as needed, the dough should be soft and elastic. Let it rest for 30 minutes covered.

  • With the help of the rolling pin, roll out the sheet, you can also use the pasta machine to make it thinner.

  • Use the heart mold over the dough and

  • insert the seasoned ricotta with salt and extra virgin olive oil, pepper, finely chopped parmesan, and thyme inside.

  • Lay another sheet of dough on top, roll with the rolling pin to flatten, proceed this way for all the dough and filling you have available, cut the edges with a knife for each individual ravioli and

  • here are your Valentine Red Ravioli ready

  • Season the red ravioli simply with butter melted in a small pan with sage and add parmesan when serving.
