Ingredients for preparing the zucchini frittata

  • 2 zucchini
  • 3 eggs
  • 1.5 tbsp extra virgin olive oil
  • 1 tsp salt
  • 0.25 cup grated Parmesan cheese
  • 7 oz mozzarella
  • 2 sprigs basil

Steps to Prepare the Zucchini Frittata

  • Wash and trim the zucchini without peeling them, use a mandoline to slice them thinly and place them in a pan with a drizzle of oil and the onion, also sliced julienne style with the mandoline. Cook on high heat for 7 minutes.

  • In a plate, place the eggs with the grated Parmesan cheese and salt.

  • With the help of a fork, mix the eggs with the cheese together.

  • Pour the egg and cheese mixture over the zucchini in the pan, and cook for 5 minutes.

  • Flip the frittata and cook it for 5 more minutes on the other side.

  • Flip the zucchini frittata again and sprinkle with mozzarella chunks.

  • Cover the zucchini and mozzarella frittata and let it rest for a few minutes before serving.
