A heart to love. Almond shortcrust pastry recipe for small embroidered hearts. Fragrant to win over whoever receives a small and tasty gift. Lovely to brighten the moment when someone finds a little sweet with their coffee. There are many recipes to make shortcrust pastry. This is one of many, with an extra gear. Ingredients

Almonds, flour, powdered sugar, eggs…

  • 2 5/8 cups almond flour
  • 2 cups 00 flour (Italian-style all-purpose flour)
  • 2 cups cornstarch
  • 2 cups powdered sugar
  • 3 eggs
  • 1 2/3 cups butter
  • 8 tbsp unsweetened cocoa powder
  • as needed white chocolate
  • as needed jam

Steps

  • Divide the ingredients to obtain two different colors. Combine the flours, eggs and softened butter in one bowl. In another bowl prepare the cocoa shortcrust. Mix quickly and let rest for 1 hour in the refrigerator to obtain the right workability.

  • Roll out the doughs and create your shapes; on this occasion I cut two-tone hearts, but of course every shape is welcome.

  • I had fun with contrasts. Let rest in the refrigerator for about 1 hour and bake at 356°F for about 15 minutes.

  • Once baked (they should not dry out too much), let cool and fill with seedless jam. I used a wild damson plum jam, slightly tart, which pairs well with unsweetened cocoa.

  • After finishing, decorate with white chocolate

A few more tips

It keeps its shape well and is suitable for tarts filled with various creams, tartlets and cream tarts. Choose a smooth jam, excellent choices are raspberry or bitter orange. You can also freeze the shaped forms ready to bake.
