A savory and fridge-clearing tatin, quick to prepare for your appetizers.

So many things to do and think about, a quick appetizer with puff pastry, which I always recommend keeping in the freezer or at least packaged in the refrigerator. If your routine often includes guests at the table, you need practical, good, and quick recipes that do not require great technical skills. This is a ready-to-use appetizer, quick, without too many instructions.

I used red onion, which was in the pantry, and then peppers, cherry tomatoes, and a piece of toma cheese… In short, Mediterranean passion. I have two variations, depending on the time available. The procedure is the same: one has a higher fat content and more crunchiness, while the other is soft and light. For a Merenda Sinoira, both are perfect.

Puff pastry: result: crunchy.

Pizza dough: result: soft.

Ingredients

  • 1 roll puff pastry (Rectangular is better.)
  • 1 pepper (Small)
  • 1 red onion
  • 3 cherry tomatoes
  • 1 toma cheese (Or other cheese)
  • to taste olive oil
  • to taste salt

Steps

In a few moves:

  • After cleaning and cutting the vegetables: the pepper into cubes, the onion into rings, cherry tomatoes in half, and cheese into cubes, slices, or chopped… Arrange on the parchment paper lining the tray, after drizzling with a little oil. First the onion rings, then the cherry tomatoes with seeds facing up, the peppers, and the cheese.

  • Cover with a square of puff pastry and bake at 392°F for about 15 minutes.

  • Turn your small savory tatins and voilà, a tasty appetizer!

It keeps well for two or three days, even out of the fridge. As written above, you can also use bread dough to obtain a softer and lighter mini tatin, as it does not have the fat content of puff pastry. You can also vary the vegetables, for example a good combination: tomatoes, olives and anchovies; grilled eggplants, mozzarella, basil; tomato, provola, olives; anchovies, wild fennel, and garlic.

    You can also freeze once cooked, then just bake it in the oven for a few minutes and voilà, you’re ready to serve. This applies to both puff pastry and bread dough.
