- 4 cups remilled durum wheat semolina
- 7 tbsps olive oil
- 2 oz lard
- 2 tsp salt
- 180 water (Warm. The quantity is indicative. Before adding the lard, you should have a firm dough for easier decoration.)
- 10 g compressed yeast (If you prefer a softer board, you can add the yeast. I prepare 2 kg of flour, with the leftovers I make some bread. Excellent dough for both carving and pinching decoration.)

Steps
Knead, wait, decorate, and bake…
In a bowl, combine the semolina, oil, and salt; mix and knead by adding the water gradually until you get a firm dough. If you add the yeast, dissolve it in a little warm water at the beginning.
Once the dough is ready, add the lard and mix well. Let it rest for at least thirty minutes covered with a cloth.
Divide into equal pieces, you will get five with a diameter of about 10 inches. Roll out into a thin disk and create your decoration. You can also use ice tongs, a fluted pastry wheel cutter, and salt dough molds. Brush with egg yolk and bake at 375°F for about 15 minutes. Remove from the oven as soon as it gets a nice golden color.

A very simple dough to prepare, an important tip is to try to maintain a good consistency. You can also decorate with a stencil using natural powders after moistening the surface with yolk or water. For coloring, you can use beetroot powder, unsweetened cocoa, turmeric, paprika, and spirulina algae.
