Therefore, a dessert that even people with celiac disease can enjoy…

  • Difficulty: Easy
  • Cost: Cheap
  • Rest time: 1 Hour
  • Preparation time: 30 Minutes
  • Portions: 8
  • Cooking methods: Bain-marie
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

Cream, sugar, eggs… Caramel

  • 2 cups heavy cream
  • 2 eggs
  • 2 egg yolks
  • 3/4 cup sugar
  • 1 cup sugar (For the caramel)
  • 2 tbsps water (For the caramel)
  • 1 tsp white wine vinegar
  • A few drops vanilla extract

Tools

Bain-marie tray, bowl, and aluminum molds or single mold, small pan for caramel

Steps

  • Prepare the caramel using the 200 grams of sugar, the teaspoon of vinegar to prevent crystallization, and the water. Put it on the stove at a low flame, stirring continuously, until it caramelizes. When you get a nice amber color, turn off to avoid it becoming slightly bitter.

  • Immediately pour into the molds that you have already arranged in the bain-marie tray.

  • Now you can whisk together the eggs, yolks, and sugar until well mixed.

  • Add a few drops of vanilla extract, and the cream

  • Mix well and thoroughly

  • You can now pour the mixture into the molds and add the water for the bain-marie. Bake in a preheated oven at 392°F until cooked. If you bake in a cold oven, increase the cooking time, which you will notice by the consistency and color; do the toothpick test anyway…

  • Once out of the oven, let them cool and then rest for an hour in the refrigerator. They taste even better the next day!

  • Creme caramel ready, just to be enjoyed!
