Earth bread recipe
I call it that because in my environmentalist nature I find the colors of the earth, the colors of the meadows and the sun, of the flowers.
I am fascinated by bread, and whenever time permits, I knead…To relax, to create a bread tailored to my mood, to fill the house with the fragrance of good things…Because it flavors my days!
A bread made with natural ingredients, the vegetables come from my garden, flour, spices, water, and salt
A strange bread with a rich flavor, an enveloping aroma.
I had seen colored breads before, in this version I find emotion, precisely because of the intensity of the colors and the cut that changes the geometry of contrasts.
Don’t be discouraged, it’s very easy to prepare…Just patience!
- Difficulty: Easy

- Preparation time: 2 Hours
- Portions: 10
- Cooking methods: Oven
- Cuisine: Italian
- Seasonality: All Seasons
Ingredients
- 2.2 lbs all-purpose flour (Plus flour for kneading)
- 1 beet (Red, small like a tangerine)
- 10 leaves chard (Spinach also works well. If the leaves are small, add a few more)
- 1 packet saffron
- 1 tsp turmeric powder
- 2 tbsps unsweetened cocoa powder
- to taste salt
- 1 cube compressed yeast
- as needed water (Warm)
Tools
- Bowls
- Blender
Steps
The first thing to do is dissolve the yeast in half a liter of warm water around 86 degrees Fahrenheit.
Blend the chard raw and place in a bowl, do the same with the beet, using a splash of water if needed (The water you’ll use for the dough)
Divide the flour into four different bowls and add the vegetables or spices, salt, and knead each separately by hand or in a stand mixer. Divide the prepared water with yeast equally; if more liquid is needed, add it plain (without yeast). Since the vegetables will naturally be more watery, you’ll need less, while for the yellow and brown dough you need a few more drops
Create four distinct balls of dough, soft and elastic. Not too dry…In the photo there are three because it was taken earlier…
From these balls, you need to create four long ropes,
Braid the ropes to create a four-strand braid
Place in an oval bowl to rise. In about two hours it will have doubled in volume. Now bake at 392 degrees Fahrenheit for about 45 minutes…Adjust with your oven
Take out of the oven and wait for it to cool before making the first cut…
At the cut, it will appear as in the photo, another cut another arrangement of colors, following the curves of the braid.
