Hazelnut Glazed Cookies
I wanted to make an Easter cookie that was really special, something different from the usual. After a little thought, I decided to use an old recipe I had tucked away in the drawer of memories, on my list of desserts to make; I keep a list updated with ideas and memories so I don’t always make the same things. My children always said: “Do you like this dessert? Okay, you won’t eat it anymore, because my mom will find another to make and this will be forgotten.” Now no more: I can share the recipes with you, and I like that. Naturally, the base is flour, eggs, sugar, butter and, of course, hazelnuts. The hazelnuts are from home for me, picked with my own hands, shelled, toasted and ground. It’s a long job that keeps me busy during the winter, but now it’s another reason to use them.
I prepared simple cookies; the cookies I used to eat as a child at Easter, using my classic base ingredients: flour, eggs, butter, sugar and, of course, hazelnuts. The result is a crumbly and fragrant cookie, decorated with royal icing and Easter-themed designs. I think they can be a great idea as an Easter gift, especially for children who don’t like chocolate. It’s a small, sweet and indulgent treat that everyone can appreciate.
If you want to personalize them, you can change the designs depending on the occasion. In any case, I’m sure these cookies will be appreciated by everyone who tastes them. I hope my passion for cooking can come through in these delicious creations.

Ingredients
Flour, butter and sugar…
- 8 cups flour (plus extra flour for the work surface)
- 2 2/3 cups hazelnut flour
- 1 cup milk (≈ 250 g (about 1 cup + 2 tsp))
- 1 1/4 cups sugar
- 7/8 cup butter (≈ 200 g (about 7 oz / 14 tablespoons))
- 2 eggs
- 2 packets baking ammonia (ammonium bicarbonate) (for pastries)
- as needed royal icing (3 egg whites)
- food coloring (your choice)
Tools
You need very little… A work surface, rolling pin, cookie cutters, and baking sheets; to avoid using too much parchment I use silicone mats. Every tool I use can be found here
Steps
The dough is very simple… Decoration takes patience… Nothing more!
Put all the ingredients into a bowl and mix, then knead on the work surface. You will obtain a smooth, firm dough, but not too hard.
Roll out the dough with a rolling pin, using a little flour to prevent sticking. I used a 2 3/8-inch (6 cm) diameter cookie cutter. I made other shapes but don’t have a photo. Bake in a preheated oven at 374°F and set them aside ready to be glazed.
While the cookies bake, prepare the icing and tint small amounts for decoration.
Now spread the icing and have fun decorating.
In this case I used Easter decorations with flowers.
