Hazelnut Iced Cookies

I wanted to make an Easter cookie that was really special, something different from the usual. After some reflection, I decided to use an old recipe I had left in the drawer of memories, in the list of sweets to make; I keep a list updated with ideas and memories, just to avoid preparing the same things all the time; my children always said: “Do you like this dessert? Okay, you won’t eat it anymore, because my mom will find another to make and this will end up forgotten.” Not anymore, I can share the recipes with you, and I like that. Naturally, the base consists of flour, eggs, sugar, butter, and hazelnuts. Hazelnuts are homemade for me, collected with my own hands, shelled, toasted, and ground. It’s a long job that keeps me busy during the winter, but now it’s another reason to use them.

I prepared simple cookies; the cookies I used to eat as a child just for Easter, using my classic base ingredients: flour, eggs, butter, sugar, and obviously hazelnuts. The result is a crumbly and fragrant cookie, decorated with royal icing and Easter-themed designs. I think they can be a great idea as an Easter gift, especially for children who don’t like chocolate. It’s a small sweet and delicious thought that can be appreciated by everyone.

Ingredients

Flour, butter, and sugar…

  • 8 cups flour (plus flour for the work surface)
  • 1 1/2 cups hazelnut flour
  • 1 cup milk
  • 1 1/4 cups sugar
  • 1 cup butter
  • 2 eggs
  • 2 packets baking ammonia
  • 1 as needed royal icing (3 egg whites)
  • 1 food coloring (Your choice)

Tools

Not much needed… Work surface, rolling pin, cookie cutters, and baking sheets; to avoid using too much paper, I use silicone mats. Every tool I use, you’ll find Here

Steps

The dough is very simple… It takes patience for the decoration… Nothing more!

  • Pour all the ingredients into a bowl and mix, then knead on the work surface. You will get a smooth and firm dough, but not too firm.

  • Roll out the dough with the rolling pin using a little flour to prevent sticking, I used a 2.5-inch diameter cookie cutter. I made other shapes but I have no photo. Bake in an already hot oven and set them ready to glaze

  • While the cookies bake, prepare the icing and also color small quantities for decoration

  • Now spread the icing and have fun decorating

  • In this case, I used Easter decorations with flowers
