Hulk’s sweet muffins with zucchini. Since zucchinis are growing abundantly in the garden, I thought of making muffins out of them, light and green, that even kids enjoy. They are Hulk’s muffins, an extra strategy to consume vegetables, as kids do not love this vegetable unless disguised, they avoid it by isolating all the pieces to the edge of the plate. This is also why zucchinis for breakfast are born! And they are happy because even the mighty character feeds on green sweets.

Ingredients

- 3 cups flour
- 2 eggs
- 1 plain natural yogurt
- 1 zucchini
- 0.5 cup milk
- 1 cup sugar
- 2/3 cup sunflower seed oil

Blend the zucchini with the yogurt.
In the bowl or stand mixer, combine sifted flour and baking powder, sugar, and finally the zucchini with yogurt, oil, and milk. Mix thoroughly and transfer into the liners.
Sprinkle the sugar crystals and bake in a preheated oven at 375°F for about 20 minutes. Always perform the toothpick test.

Some more tips
With the same amount of carrots, you can also make carrot muffins, you just need to boil them first. If you prefer, you can add almond flakes or granules on top. They keep for about a week in a cool, dry place. Ideal for breakfast or school snack.
