Hazelnut lady’s kisses recipe
…And as often happens, after harvesting the fruits of the earth, in this case the hazelnuts… You have to consume them too! You don’t want to miss this delightful opportunity!
This is how you put into practice the knowledge and bake sweetness… Luckily, the holiday season also allows for gifting, so my kitchen becomes hot, and the oven is always on… I also had the splendid idea of purchasing the multifunction oven, indeed it lightens some work, in this case, the hazelnut roasting, with its rotating basket the result is perfect!
Enzo took care of shelling all the hazelnuts, now it’s time to do further sorting, to eliminate defective hazelnuts, and then another one to separate whole hazelnuts from the pieces… You never get bored!

Ingredients
Hazelnuts, flour, butter…
- 2 cups flour
- 1 cup lightly toasted hazelnuts
- 7 oz butter
- 2/3 cup sugar
- 1 egg
- 5 oz chocolate (Not flavored with rosemary.)

Steps
First, lightly toast the hazelnuts…
Lightly toast the hazelnuts, I prefer this system, the flavor improves significantly. After toasting, remove the excess skins.
Transfer the room temperature butter to a stand mixer along with the sugar and whip with the whisk until creamy
In the meantime, make flour from the hazelnuts, I prefer to add a bit of white flour taken from the required weight to keep the hazelnuts dry and powdery.
Combine the two flours and sift to eliminate any unground hazelnuts, and because if combined first, the dough will remain more homogeneous.
After whipping the butter, add the egg and incorporate it well
At this point, add the two flours and mix carefully until finished.
Let rest in the refrigerator to solidify the dough for about an hour
Then form small balls slightly larger than a hazelnut. Bake in the oven at 350°F until lightly golden, and make sure they are cooked inside. It will take 15/20 minutes depending on the ovens.
With the chocolate prepared beforehand, pair the lady’s kisses when they are completely cold.
The kisses can be stored for a week outside the refrigerator, I could suggest filling them also with a creamy chocolate to which you have added instant coffee, they are amazing. Alternatively, an unusual pairing with white chocolate. If you add 20 grams more butter, and do not let them rest in the fridge, you can use a piping bag to create your kisses.
