Lavender time could not be missed in the kitchen, I have always loved this flower, as soon as I had the opportunity it became part of my garden.

In Provence, I learned several things about lavender including tasting delicious cookies and the aromatic mix they prepare to flavor meats

Not everyone appreciates the use of such an aromatic plant in the kitchen, but with the right dose, you will enjoy a delicate and delightful shortbread accompanied by a great tea

I might be obsessed, but every food I manage to produce myself gives me satisfaction; in this case: pastry, jam, and lavender are the result of my work.

  • 3 cups flour
  • 1 cup butter (At room temperature)
  • 1 cup powdered sugar
  • 2 eggs
  • 1 egg yolk
  • 2 lavender flowers (2 fresh sprigs, or dried; absolutely untreated)
  • 1 tablespoon sugar
  • 1 cup powdered sugar (For the glaze)
  • as needed food coloring (Blue, red)
  • 0.66 cup cherry jam

Steps

Between fragrance and sweetness, we begin…

  • Cream the butter and powdered sugar (1 cup) until the mixture becomes fluffy; in the meantime, in the coffee grinder, pulverize the lavender flowers with the granulated sugar

  • Add the eggs one at a time, allowing each to be fully incorporated before adding the next; mix in the lavender sugar

  • After finishing with the eggs, gradually incorporate the flour.

  • At this point, transfer the creamy mixture into the syringe or piping bag…

  • And pipe it onto the baking sheet

  • Bake for about ten minutes at 375°F, do not overbake them. Remove from the oven and let cool; they are very delicate and you risk spoiling your work

  • Turn them all over and fill with cherry jam, in my personal taste it is the best combination

  • Pair the cookies.

  • Now prepare the glaze for the coating, in a bowl temper the powdered sugar with very little water, proceed in very small doses; when I learned to make glaze, it took a while, I always added too much water or color, so you need to proceed calmly to achieve the right intensity.

  • Glaze your cookies, first with the base shade and then decorate with another tone

  • I made simple stripes, even dots are delightful

  • Shortbreads ready! Now you just have to enjoy them in all their fragrance and delicacy.

They keep for a few days, the moisture of the jam will create a contrast with the crunchy shell of the glaze.
