Sometimes apples are abundant, so they need to be used differently… I can’t eat ripe apples, so as soon as they cross a fine line between acidity and sweetness… Taaac, they need to be consumed differently!

The recipe comes from the need to use up apples, but also to renew nuts as the new batch arrives in a few weeks…

Shortcrust pastry, check… Eggs, check, fruit all set… Let’s start thinking about a tasty combination

Shortcrust pastry base, with an apple, raisin, and walnut filling, let’s give it an unusual touch; a soft layer of soft and tasty pastry… The leftover amaretti from the pudding have found their place!

I can assure you that the result is more than satisfying, you’ll tell me if I’m right.

Ingredients

Shortcrust pastry, apples, walnuts, amaretti, and lots of sweetness

  • 14 oz shortcrust pastry
  • 7 cups apples (Common yellow apple)
  • 3.5 oz amaretti (dry)
  • 1/2 cup sugar
  • 3.5 oz walnuts
  • 1.8 oz raisins
  • 2 eggs
  • 1/2 cup flour (For the amaretti foam)

Tools

Whisks, rectangular mold, pastry board…

Steps

  • While kneading the shortcrust pastry…

  • Cut the apples into pieces and add the crumbled walnuts, raisins, and 2 tablespoons of sugar; mix well

  • Now roll out the shortcrust pastry and line the mold

  • You can now pour the apples over the entire baking tray

  • In the little juice left at the bottom of the apples, add the crumbled amaretti, meanwhile whip the eggs with 1/4 cup of sugar until foamy

  • After whipping the eggs, add them to the amaretti along with 1/2 cup of flour, mix well, gently

  • Cover the entire surface slowly, part of the mixture will go to the bottom

  • I decorated it with strips of shortcrust pastry and almond flakes; bake at 375 degrees for about 20 minutes or until golden

  • Remove from oven and sprinkle with powdered sugar; it’s delicious hot with vanilla ice cream, cold it’s spectacular! It keeps at room temperature…
