Orange and caramel cream recipe

Sometimes you need to bring something new to the table; some cold days allow us to vary the menu and add more “nutritious” creams in terms of calories; a nice walk solves the problem of keeping fit.

Creams are also a treat for bad days, sitting on the couch, with the base, good music, and you’re done… Relax is the word that best fits in these situations.

This cream is very simple to prepare, quick and tasty…

Today I present it to you in a cup, but you can let it cool and form quenelles to accompany a shortcrust pastry or some fragrant cookies for an afternoon with friends

Ingredients

Milk, cream, fresh eggs…

  • 8.8 oz heavy whipping cream
  • 1 cup milk
  • 6 egg yolks
  • 3/4 cup sugar
  • 0.25 cup potato starch
  • 1 orange zest (I derive it from dried organic orange peels, fresh is fine too)
  • 6 tablespoons sugar (For caramelizing)
  • 2 pinches ground cinnamon

Steps

In no time… The dessert is ready!

  • Prepare the ingredients near the workstation, pour the yolks and sugar and begin to mix well, without whisking…

  • Then add the potato starch and mix until you obtain a homogeneous mixture

  • At this point, scent with cinnamon and add the finely chopped orange peel; to achieve a good result, grind 2 tablespoons of sugar with the coffee grinder, together with the orange peel. If you use the ampoule, being an oil, it might cause the cream to separate.

  • Pour in the milk and cream and mix well

  • Thicken on the stove, be careful it will detach from the edges, at the first detachment remove from the heat…

  • And after pouring the caramel at the bottom of the ramekins, divide the cream equally;

  • Let it cool and cover with about a tablespoon of sugar which you will then caramelize with the appropriate torch; an irresistible crust will form

  • Your orange cream is ready…

  • Good and beautiful!
