This recipe was created to reuse leftovers from other recipes. As often happens, you try not to waste food and create different combinations. You can buy puff pastry, but I recommend trying to make it at least once at home; you’ll notice the difference. You can store the excess in the freezer cut into small weight blocks or sheets to use as needed. The custard is easy to prepare, and I will later explain the crunchy almond glaze. The same one I use for the Easter dove cake.

Puff pastry, custard…
- 9 oz puff pastry (Or buy a rectangular roll)
- 7 oz custard
- 1.23 oz almond flour
- 1.41 oz sugar
- 0.71 oz flour
- 1 egg white (Or a little more; it depends on the flour.)

Steps
After preparing the pastry, cut rectangles; in the photo, you see the uneven edge, which will be folded inside so it won’t be visible. With the help of the piping bag, distribute the cream and close by folding the sides over the cream and pressing the ends slightly. Let rest for about fifteen minutes in the refrigerator.
In the meantime, prepare the glaze, mix the flours, sugar, and add the egg white
Once ready, spread over the puff pastries. More or less glaze, once cooked, will give you a different crunchiness. I made them in two ways.
Bake in a preheated oven at 375 degrees Fahrenheit, placing the tray in the center of the oven. It will take about thirty minutes for cooking.
