Roasted potatoes stuffed with sausage and… A dish that might seem wintry to many, but you can prepare and enjoy it in all seasons. In winter, because it’s nice to eat something warm, while in the beautiful season with the right company it is fantastic for a rustic dinner in the garden.
Ideally, it should be cooked in a wood oven, but we can easily use: the fireplace, the grill, the electric oven, or the air fryer.
When I started making this recipe, I used to finish it in the wood stove oven, Then I moved directly to the wood oven, now I use the air fryer. The aromas change a bit, but the result is amazing!
So don’t worry, you’ll make a great impression! There was a time when this recipe was offered in a pizzeria, I was the cook, then the working relationship dissolved, and they no longer offered it.
Very easy to prepare and very tasty, the only downside: it cannot be considered a light dish, rather it is loaded with good things and accompanied by a good beer it will be unforgettable!

Ingredients

- 6 potatoes (large)
- 14 oz sausage
- 1.3 lbs onions
- 10.6 oz smoked provola cheese
- 1 bell pepper

Steps
We don’t have much time. Organizing to do everything in the best way is useful. Even in the kitchen, before starting, prepare all the ingredients to make the procedure go as smoothly as possible, which is still very simple.
Wash the potatoes and put them in cold water to boil, add some salt and cook. They should be soft.
Meanwhile, cut the sausage and vegetables into small pieces. Sauté in a frying pan, add the herbs and salt. Finish cooking in a few minutes.
In a pot, sauté the onion and add the cherry tomatoes and basil. Cook for about ten minutes.
As soon as the potatoes are ready, cut off the top as you see in the photo and scoop them out. Add the scooped flesh to the sausage and diced provola cheese; fill the potatoes and finish with abundant Parmesan.
Now prepare the baking dish: place the cherry tomatoes on the bottom, then the stuffed potatoes. Roast in the oven or air fryer. A wood oven or fireplace is excellent.
Once ready, serve this unique dish full of flavor and color!
Some extra tips
It seems like a complex job, but it’s actually a quick and delicious dish. You can also bake it wrapped in foil to serve directly at the table. You can also use small single-serving baking dishes. With the leftovers, I made some balls and fried them. They make an excellent appetizer and nothing is wasted.
