Like musical notes; the world of pastry revolves around these simple ingredients: cakes, pastries, cookies, shortbread, creams all have eggs, flour, and sugar as their base.
Foods that come from nature, rich in nutrients, more or less complex, but that aggregate among themselves to form an incredible multiplication of chemical variations. You just need to add one different ingredient to get textures, aromas, and appearance.

In the cake I present today, there is a connection with the elements that releases special aromatic notes
made of stories from distant lands: of chocolate, which is enveloped by the fragrance of candied and sweet oranges from the Mediterranean, to create a harmony of flavors and perfumes, enclosed in the soft dough created with flour, eggs, and sugar.

You can modify the doses because, if you divide by six, you will get the right amount for each individual egg. The candied fruits used, I produce every year myself, with the peels of oranges or other citrus fruits that I usually consume in winter, naturally starting from untreated fruit.
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 1/2 cup sunflower oil
- 2/3 cup water
- 3 1/2 tsp baking powder
- 7 oz candied orange peel
- 5 oz dark chocolate (Both flakes and chips are fine)

Steps
Proceed with simple steps; I always recommend weighing and preparing all ingredients in advance to work smoothly.
In a bowl, beat the egg yolks with water until you get a frothy consistency.
Then add the sugar and continue beating for a few minutes.
Meanwhile, beat the egg whites to very stiff peaks, with a pinch of salt; this step is important: it must be very firm. If you have only one device for beating, start with the egg whites, which won’t collapse, and then with the yolk foam.
After beating the yolks with sugar, add the oil, sifted flour with baking powder, and two teaspoons of candied fruits. Mix carefully and finally add the egg whites with movements from top to bottom.
Place a parchment paper disc on the base of the pan and distribute the candied fruits across the surface.
Add the mixture and bake in a preheated oven at 329°F for about 60-70 minutes.
Let it cool slightly and unmold your cake, light as a cloud.
A soft texture, light color with a moist crumb.
The candied oranges will give a special touch.

You don’t have to eat it! 😂 Just kidding! It’s delicious, and you won’t be able to resist; however, it can be stored at room temperature without problems for two or three days.
