Sobrìch recipe of humble and fragrant herbs
Ancient Piedmontese recipe used to recover the previous day’s vegetable leftovers… Or…
In the garden, vegetables begin to abound, like wild herbs, often some parts of the vegetables are not used, mistakenly thinking they are not good; the green of the scallions, carrot leaves, the outer parts of some lettuces, celery leaves… If we then add tender zucchini with their flowers, purslane that abounds among the rows of vegetables and then… basil, parsley, pepper, and nutmeg
Once upon a time in the countryside many harvested vegetables ended up in fritters; everything was used, and every leftover from the previous day ended up in some recycled recipe; in this one, it also includes bread soaked in milk, or breadcrumbs. When I have leftover bread, I let it dry and grate it, to have it always available.
In this case, it’s a recipe with summer vegetables or herbs, it transforms with winter vegetables, therefore an excellent hot or cold appetizer for all seasons. The beauty and convenience of this preparation is that both cooked and raw vegetables can be used. A brilliant and tasty recycling idea

Ingredients
All the vegetables or wild herbs you have available… You’ll make about 20 sobrich
- 2 zucchini
- 1 scallion (With its green)
- 1 carrot (With leaves)
- 10 zucchini flowers (Or zucchini)
- 2 celery (leaves)
- 4 leaves basil
- 1 cup breadcrumbs
- 4 eggs
- 1/2 cup grated Parmesan cheese
- 2 pinches nutmeg
- 2 pinches pepper
- to taste salt
- to taste vegetable oil (For frying)
Tools
Frying pan, oil absorbing paper, mixing bowl
Steps
Prepare and clean all the vegetables
Then cut them into small pieces or slices
Combine all ingredients in a bowl and mix carefully
You will get a moderately dry mixture
Form small balls and flatten them, or take them directly with a spoon and fry them in hot oil
Drain excess oil on absorbent paper for fried foods
Your sobrich are ready
In two different versions, because they are very popular and I prepare them often
They can be easily stored in the refrigerator for two days.
