Sweet Clover Muffins.

In this season, I easily find sweet clover; a few days ago, I thought it wouldn’t bloom this year, but within a few days, I found myself with a field of sweet clover. Every early summer, I collect it to use in my desserts

It has a unique aroma, it’s very fragrant, and my house fills with a sweet, summery aroma. Meanwhile, the drying process continues, and its tiny flowers, both white and yellow, become even tinier, so there’s no need to pulverize them.

Today, I present to you the recipe for sweet clover muffins

a special breakfast featuring goodness and nature at your fingertips

If I add a dash of honey

there’s no debate over the aromatic notes that, when encountered by our taste buds, provide an immersion into sunny, flower-filled summer fields.

As often happens, it’s a very simple recipe to prepare. It’s sweet, but if you pair it with a spreadable cheese, I guarantee you’ll be surprised.

Ingredients

Flour, acacia honey, and sweet clover….

  • 3 cups flour
  • 2 eggs
  • 1 cup milk
  • 1 cup brown sugar
  • 1/4 cup acacia honey
  • 2/3 cup sunflower oil
  • 2 tsp aromatic herbs (Fresh sweet clover flowers 3 tsp, dried 2)
  • 1 packet baking powder (For desserts)

Stand mixer or bowl for mixing, mixer, muffin molds

Steps

In a few minutes, a delicious dessert

  • Place in the bowl of the stand mixer or glass bowl the flour, sugar, and sifted baking powder. Mix well, and add milk, eggs, oil, and honey.

  • Mix carefully and add the sweet clover. Incorporate well…

  • …And distribute in the molds which you will bake in a preheated oven at 375°F for about 15 minutes. They will form a nice dome. Fill the molds two-thirds full, otherwise, you risk overflowing the batter and deforming your muffins.

  • Once baked, sprinkle with powdered sugar

  • Your muffins are ready to enjoy for a delicious breakfast, to accompany green tea, or a hot chocolate

As it is a dry dessert, it can be stored at room temperature. You can also use a single mold to make a soft and fragrant cake, to be served in slices, or a loaf pan.
