Sweet Focaccia with Concord Grapes. Wandering among ancient farms, I still come across the “topie,” which are pergolas in the Piedmontese dialect Piedmontese. You can smell the scent of Concord grapes from afar, even though their numbers have drastically decreased. But I’ve always been in love with them; I’ve always waited for September to make sweet focaccia with Concord grapes. Fragrant sweet that also gives purple hues.

An old recipe that I propose every year precisely for its delicate goodness, for its pleasing color.

Simple to prepare, within everyone’s reach. One could use other varieties of grapes, but the result will not be the same.

In Italy, there are many variations, as often happens with many other recipes. All good, all special.

Ingredients

Few and good!

  • 4 cups flour
  • 2 ½ cups milk
  • 1 cube compressed yeast
  • 3 ½ tbsps butter
  • as needed Concord grapes
  • as needed sugar (For the surface)
  • 2 tsp salt

Steps

Knead, fold, fold, and meanwhile, let it rise… bake

  • First of all, knead the flour with the yeast dissolved in a part of the lukewarm milk, the rest added little by little, the salt, and the butter. Knead for a long time, at least ten minutes. Let it rest for thirty minutes and

  • Transfer to the work surface. Open the dough and make a three-fold, pause for thirty minutes and repeat the operation. Pause for thirty minutes.

  • Roll out the dough and place the grapes first in the center, fold in the edges, and add more grapes.

  • Flip the dough over onto the baking tray lined with parchment paper. Sprinkle generously with sugar and add more grapes. Allow it to rise until doubled in size, about two hours.

  • Bake in a preheated oven at 375 degrees Fahrenheit for about 45 minutes.

  • Wait for it to cool to enjoy it at its best!

A few more tips

Use grapes at room temperature. You can also use white Concord grapes. Some grapes leave too acidic a taste, but if you like it, you can do it. Concord grapes provide not only taste and aroma but also a wonderful color, while others will have a different tone.
