Ziti with broccoli and anchovies.
Once, I didn’t like broccoli, as I think many of you; as a child, I found them horrible đ Today my winter vegetable garden is full of this delicious vegetable…Yet I keep making the same recipes, why do children never eat vegetables, especially green ones?… Even at work, my kids who attend the canteen carefully avoid leafy greens…Alas, I donât know about cabbages, as we don’t have this vegetable on the menu!
Children often refuse to eat broccoli because they have a bitter and strong taste that might not be appealing to everyone. Moreover, they might be influenced by factors like the unfamiliar appearance of the food or past negative experiences with that particular food. However, broccoli is an important source of nutrients like vitamins, minerals, and fiber, so it is important to encourage children to eat them to ensure a balanced and nutritious diet. There are creative ways to prepare broccoli to make them more acceptable to children, such as steaming them, sautéing them with a little olive oil and garlic, or blending them into a creamy soup. Additionally, involving children in food preparation can help them develop a more positive relationship with foods they might initially dislike.

Ingredients
Broccoli and anchovies…
- 2.2 lbs broccoli
- 300 ziti
- 2 potatoes
- 8 salted anchovies
- 2 cloves garlic
- 4 tablespoons olive oil
- to taste salt
Tools
You need a pot for cooking broccoli and ziti, and a pan for anchovies and tossing
Steps
There are few steps you will take, they are quick first courses; to bring good and fresh first courses to the table!
If we organize our days, even cooking becomes easier; like you, I work outside the home, so I have to organize my husband’s lunch, but I’ve always managed this way, even when the children were still at home with us
In the case of ziti and broccoli, the night before I cook the broccoli, then I just have to melt the anchovy and cook the pasta…In half an hour everything is ready!
If instead I can take the necessary time in 45 minutes the first course is ready!
Boil the chopped potatoes and broccoli florets in salted water, which you will then use for the pasta; when they are cooked, transfer some to the pan you used to sauté the garlic and anchovy; add a little cooking water and mix well.
Meanwhile, cook the pasta in the broccoli broth; drain them when cooked and let them soak up the flavor in the pan with the final seasoning, mix well and serve the steaming pasta with a sprinkle of hot pepper if you like
Your first course is ready to enjoy!
The first courses always keep at least until the next day. They are often even better! I used ziti because they go well with the sauce, but other pasta shapes are fine as well.
