Zucchini Skewers. Easy and Delicious Recipe in Five Minutes!
When I prepare zucchini skewers, I find myself immersed in an emotional journey that takes me back in time, to their unexpected origin and evolution.
It all started one day when I was in the kitchen preparing some tomatoes to put on the grill. While cutting zucchini for another recipe, I thought of not wasting anything and using them to create something new and original. That’s how the idea of zucchini skewers was born, a creative way to use the abundant harvest and to add a touch of modern presentation and variety to my table.
Every year, when zucchini season arrives, I can’t help but prepare the skewers and let myself be carried away by the emotions they offer me. Ingredients
Zucchini and zucchini…Bread and cheese…eggs and milk….
- 8 zucchini (Medium-large.)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 cup milk
- 1 tablespoon basil (Chopped)
- 1 clove garlic (Small, depending on your preferences)
- to taste salt

Cutting board and knife to slice, or mandoline. I cooked them in my multifunction oven, on this occasion, before I didn’t have it so I used a regular oven, turning them occasionally, but they can also be fried if you want to do it faster, they are just as good!
Steps
Slice, flour, create, and cook!
First of all, slice the zucchini into rounds after cleaning and washing them; in a bowl, beat the eggs with the milk and a pinch of salt, and pour in the sliced zucchini.
Add the breadcrumbs, cheese, basil (mine is paste as I was doing other preparations), finely chopped garlic, a pinch of salt, and mix well.
Now drain the zucchini slightly and bread quickly; once all the ingredients are used up…
Arrange the breaded rounds on skewers…
Everything is ready for cooking, as you read earlier I didn’t use oil for cooking, but if you prefer frying, of course, you must add it to the ingredients.
Put it in the oven and started cooking, in a few minutes they are ready!
Crispy, visually appealing, and above all, delicious!

They keep for two days without any problems, but I’m sure they will be a hit! This is my recipe, but you can certainly omit the garlic and replace it with onion or make a spice mix, I’ve tried different combinations, even replacing the bread with chickpea flour for a gluten-free dinner, so let your creativity run wild!
