The recipe for these egg and ham baskets is really simple, 10 minutes to prepare them, they bake in the oven without oil or butter, which you can of course always add, but I recommend avoiding it, they are excellent without.
They are salt-free; it is not needed as the ham releases its saltiness during cooking, and if you add parmesan, I would suggest avoiding it altogether.

Ingredients
- 3 eggs
- 1 zucchini
- 3 slices cooked ham
- to taste Parmigiano Reggiano DOP
- to taste black pepper
Preparation
Oil a muffin tin.
Cut the ham into strips and arrange them in the muffin slots, crossing them to create a full base without gaps.
Dice one zucchini into small pieces and mix them with parmesan and pepper if you prefer.
Pour the eggs into the ham baskets, being careful not to break them.
Decorate with the zucchini.
Bake in the preheated oven at 356°F and cook for 15 minutes or more if you prefer them firmer.
Serve on a bed of arugula or salad.
