The recipe to make almond and egg white cookies is very simple, blend the almonds with the sugar, add the egg white and bake in the oven, they are so good you can eat them one after another.

Ingredients
- 3/4 cup almonds (about 3 oz)
- 1 egg white
- 1/3 cup oz sugar (about 2.8 oz)
- powdered sugar
Steps
Place the almonds in a mixer with the sugar and blend coarsely.
Transfer everything to a bowl, add the egg white, a pinch of salt, and mix with a spoon.
Take a portion of the mixture and form 6 balls, roll them in powdered sugar and place them on a baking sheet lined with parchment paper.
If the mixture is soft, you will get flat cookies like mine, if you like them puffier, add a few tablespoons of cornstarch or almond flour.
Bake at 350°F for 15 minutes.
Remove from oven and let cool.
