Ingredients

  • 2 cups mascarpone
  • 7 tbsp lemon juice
  • 2 tbsp water
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp acacia honey
  • 1 tsp white wine vinegar
  • as needed ladyfingers
  • Half lemon zest

Steps

  • Work the egg yolks with the sugar in a saucepan with a hand whisk.

  • Add half of the lemon juice, the grated zest, and cook for 5-6 minutes, stirring constantly with the hand whisk.

  • Whip the egg whites then add the honey while continuing to whip and the vinegar, the egg whites will be soft and thick.

  • Work the mascarpone with an electric whisk then add half of the yolks and gently fold, also add the egg whites and continue to fold, set aside 1/3 of the mixture and add the rest of the yolks, fold.

  • Prepare the soaking mixture for the ladyfingers with lemon juice and limoncello, add a bit of water to dilute and stretch the mixture.

  • Soak the biscuits and arrange them at the bottom of the cups, then alternate the two creams in the cups with the biscuits, put in the fridge to rest for 30 minutes.
