Ingredients
- 1 cup milk
- 2 tbsp sugar
- 0.25 cup almond flour
- 8 amaretti cookies
- 1 egg yolk
- 1 oz 60% dark chocolate
- 2/3 cup whipping cream, 35% fat
Steps
Work the egg yolk with the sugar in a saucepan with a hand whisk, add the almond flour, always mixing, then heat the milk and add it slowly, always mixing.
Add the chocolate and let it melt, crumble half of the cookies, mix and continue until it thickens.
Place the cream in a low, wide container covered with plastic wrap in contact and let it cool.
Combine the cream with the whipping cream and whip everything together, then place the cream in cups, alternating with a couple of crumbled cookies.
