Ingredients

  • 1 cup milk
  • 2 tbsp sugar
  • 0.25 cup almond flour
  • 8 amaretti cookies
  • 1 egg yolk
  • 1 oz 60% dark chocolate
  • 2/3 cup whipping cream, 35% fat

Steps

  • Work the egg yolk with the sugar in a saucepan with a hand whisk, add the almond flour, always mixing, then heat the milk and add it slowly, always mixing.

  • Add the chocolate and let it melt, crumble half of the cookies, mix and continue until it thickens.

  • Place the cream in a low, wide container covered with plastic wrap in contact and let it cool.

  • Combine the cream with the whipping cream and whip everything together, then place the cream in cups, alternating with a couple of crumbled cookies.
