The recipe for making apple and jam brioche croissants is quite simple, flour, yeast, sugar, and eggs, no secret ingredients, just knead and let the base rise.
Of course, you can add some ingredients to the recipe like pine nuts or you can replace the jam with custard.

Ingredients
- 2 1/2 cups all-purpose flour (I use Caputo red)
- 1 1/2 tsp fresh yeast
- 1 egg
- 1 tbsp butter
- 1/2 cup milk
- 3 tbsp sugar
- 1 Red Delicious apple (Stark)
- as needed apricot jam
Preparation
Dissolve the yeast in the milk, pour the flour into the food processor or a bowl, add sugar, a pinch of salt, the egg, and a little milk.
Begin kneading gradually adding more milk and finally the butter in pieces.
Work well until you obtain a soft, slightly sticky dough.
Make a kind of fold, that is, create a rectangle with the dough without a rolling pin and fold the short side towards the center.
Cover with the other side then shape into a ball and let it rise until doubled in size in a bowl covered with plastic wrap, about 4 hours.
After the time has passed, take the dough, make a round of folds, and let it rest for an hour.
Then take the dough and roll it out on a lightly floured work surface, form a rectangle and obtain 7-8 triangles.
Peel and cut the apple into small pieces, fill the base of the croissants with the apple and jam then close by wrapping the brioche dough.
Place the croissants on a baking tray lined with parchment paper and let them rest for 20 minutes.
Preheat the oven to 350°F (fan), bring it to temperature, then bake and cook for 10-15 minutes.
