- 2 cups flour (the kind you usually use)
- 3 eggs
- 1/2 cup sugar
- 2 tsp baking powder
- 1 pinch salt
- 1/3 cup milk
- 3.5 tbsp butter
- 2 cups apples (2 medium apples)
Steps
Peel the apples, cut them into chunks and set aside (you can sprinkle them with a bit of lemon).
Separate yolks and whites. Beat the whites until stiff with a pinch of salt and set aside.
In a bowl, beat the yolks with sugar until pale and frothy.
Add the warm melted butter and milk to the yolks, mixing well.
Fold in the sifted flour with baking powder and lemon zest, gradually.
Add the apples gently, then add the beaten egg whites, folding them from bottom to top to keep them fluffy.
Pour the batter into a 9-inch greased and floured pan.
Spoon 5-6 teaspoons of jam over the top.
Bake in a static oven at 350°F for 40-45 minutes. Let it cool down before removing from the pan.
