The recipe for this apple and walnut strudel cake is quick to prepare, first make the custard and then roll out the dough to fill it, it’s a pleasure to crunch pieces of fresh and dried fruit.
The outer shell and filling of this cake is typical of the apple strudel but made in a different form; of course, if you prefer, you can use puff pastry.

Ingredients
- 2 cups All-purpose Flour
- 7 tbsps Extra Virgin Olive Oil
- 1 egg
- 1 pinch Salt
- 2 Apples
- 10 Walnuts
- 3.5 oz cookies (dry and amaretti)
- 1 cup Milk
- 1.75 oz Sugar
- 1 egg yolk
- 2 tbsps All-purpose Flour
Preparation
To make the strudel cake, prepare the custard by working the egg yolk with the sugar in a saucepan, add the warmed milk slowly.
Continue working with the whisk and add the flour, stirring constantly until it thickens.
Prepare the base dough by pouring the flour into a mixer or bowl, add the egg and the oil gradually.
Add the salt and water if needed, the dough should be smooth and not sticky.
Divide it in half, roll out one half in a 20-22 cm tart pan and add the custard.
Break the cookies into pieces, I used both amaretti and dry ones, and sprinkle them over the custard.
Add the chopped walnuts.
Peel the apples, cut them into pieces, and place them on the pastry.
To make the strudel cake, cover with the other half of the dough and bake in the preheated oven at 350°F.
Bake for about 30 minutes, then remove from the oven and let cool before slicing the strudel cake.
