Ingredients

  • 1 roll puff pastry
  • 3 artichokes
  • 3 eggs
  • 7/8 cup cooking cream
  • 2.5 oz grated Parmesan
  • 1 clove garlic

Steps

  • Clean the artichokes, remove the tough leaves, and slice them thinly, sauté them in a pan with oil and garlic for 8–10 minutes until soft. Lightly salt. Remove the garlic.

  • In a bowl, beat the eggs with the cream, add the Parmesan, salt, and pepper, combine the artichokes (and a bit of parsley if you like).

  • Unroll the puff pastry in a mold lined with baking paper, prick the bottom with a fork, pour the filling, and slightly fold the edges, add a sprinkle of Parmesan.

  • Bake in a static oven at 356°F for 35–40 minutes, until golden and well set.

  • Let cool for 10 minutes before cutting.
