I found fresh artichokes at a good price, so I thought of preparing this easy recipe, perfect as a main, side, or appetizer. They are quick to make and incredibly delicious, crispy on the outside and soft on the inside.
I usually use tender artichokes, clean them well, and slice them thinly. The batter is super simple: flour, eggs, water, and a pinch of salt. Mix everything, add the artichokes, and fry them in a pan or air fryer.
The artichoke fritters also lend themselves to variations: with pecorino instead of parmesan, adding pine nuts or breadcrumbs in the batter for extra crunchiness. Perfect for dinner with friends or to accompany meat and fish.

Ingredients
- 2 artichokes
- 100 g flour (your usual type)
- 1 egg
- 1 pinch salt
- 50 ml water
- pepper (optional)
- chopped parsley
- 50 g grated parmesan
Steps
Remove the tougher outer leaves and cut off the thorny tips, cut the artichokes in half, remove the inner choke, and slice the hearts thinly.
Soak the slices in lemon water to prevent them from browning.
In a bowl, beat the egg with salt and pepper, add the flour, sparkling water, and grated cheese. Mix until you get a smooth but not too runny batter.
Drain the artichokes well and add them to the batter, add chopped parsley, and if desired, a finely chopped garlic clove.
Heat plenty of oil in a pan, using a spoon, drop small portions of the batter with artichokes into the hot oil.
Fry until golden on both sides (about 3-4 minutes per side).
Drain on absorbent paper.Serve hot, possibly with a splash of lemon or an extra pinch of salt.
