Ingredients

  • 4 cups flour (the one you usually use)
  • 1/3 cup sugar
  • 5.5 tbsp butter
  • 1 egg
  • 0.42 oz fresh yeast
  • 1 lemon zest
  • 1 pinch salt
  • 3/4 cup raisins

Steps

  • Soak the raisins in lukewarm water (or rum, if you prefer). Then drain and squeeze well.

  • Dissolve the yeast in lukewarm milk with a teaspoon of sugar, in a large bowl (or stand mixer) pour the flour, sugar, egg, lemon zest, and milk with yeast.

  • Start kneading, then add the softened butter in pieces and finally the salt, add the raisins last. You need to obtain a smooth and elastic dough.

  • Cover the dough and let it rise in a warm place until it doubles in volume.

  • Divide the dough into pieces of about 2 oz. Shape into logs and form rings, place the donuts on baking sheets with parchment paper, cover, and let rest for 30 minutes.

  • Bake in a preheated oven at 350°F until golden (not too dark).

  • As soon as they are out of the oven, sprinkle with powdered sugar.
