Ingredients
- 9 oz Red potatoes
- 1 egg
- to taste Breadcrumbs
- 1 tbsp Parmigiano Reggiano DOP
Preparation
Peel the potatoes with a peeler, wash them and pat dry with a cloth.
Cut them into coarse pieces and place them in a pot with lightly salted water.
Let them cook until tender, about 20 minutes.
Drain well and mash them in a bowl with a potato masher, add the Parmesan cheese and mix.
Do not add eggs, we want them firm. If necessary, add a bit of flour.
With red potatoes, you shouldn’t have any issues; they are perfect for this preparation.
Beat the egg in a plate and set out the breadcrumbs in another.
Form a patty with about a tablespoon of puree and flatten it in the palm of your hand.
Place it on a cutting board and cut it with a 2-inch star-shaped cutter.
Gently lift it, dip in the egg and then in the breadcrumbs.
Place the stars on a baking sheet lined with parchment paper, oil well, and bake in the hot oven at 392°F for 10 minutes.
