A delight, the baked potato and egg casserole with tomato cooked in the oven and enriched with speck, it’s prepared in no time and disappears in minutes.
I didn’t have many ideas for dinner and would have resorted to legumes but I remembered having some organic baby potatoes that needed to be used up, and what’s better than a nice baked potato and egg casserole?
Delicious, a light and tasty dish, of course, just omit the speck to lower the calories and it will still be perfect even for children.

Ingredients
- 1 lb lbs Potatoes (baby)
- 3 Eggs
- 3 tbsp Canned cherry tomatoes (or tomato puree)
- Half Onion
- 3.5 oz oz Speck
- to taste Breadcrumbs
- to taste Extra virgin olive oil
- Oregano
- Salt
Preparation
For the recipe, I used organic baby potatoes with the skin on.
Wash the potatoes well and if they are organic, you can leave the skin on, otherwise peel them.
Cut them into 4 parts or into not too large pieces.
Boil them in a pot with water covering the potatoes by about 2 inches.
Cook for 15 minutes after the water starts boiling.
Drain well and place them in a bowl, add the tomato, oil, salt, oregano to taste, the onion, the speck, and season.
Chop the onion and cut the speck into strips.
Oil a baking dish and pour in the potatoes, make some space where you will insert the eggs.
Place one egg in a dish and beat it well then pour it over the potatoes.
Place the other two eggs spaced apart, break them over the potatoes where you left space, sprinkle with breadcrumbs, and lightly oil.
Bake in a preheated oven at 392°F and cook for 15 minutes, obviously always check before turning off.
