Ingredients
- 2 Roman artichokes
- 4 Potatoes
- to taste Parsley
- 1 clove Garlic
- Extra virgin olive oil
Preparation
Clean artichokes, remove the tougher outer leaves, inner hairs and cut them into wedges.
Sprinkle with lemon and set aside.
Peel the potatoes and cut them into not too large chunks, wash them and pat dry with a cloth.
Put them in a bowl, add the artichokes, mix with chopped garlic and parsley, salt and season.
Pour everything into an oven-proof dish, oil again and bake in a preheated oven at 356°F (180°C) for about 40-45 minutes.
Obviously, the larger the potatoes, the longer the cooking time.
