These bread rolls with zucchini and bacon are one of my all-time favorite recipes: I make them in 5 minutes, no stress, and… they always disappear in a flash! 😍
Perfect as a quick appetizer, for a tasty aperitif or to put in the party buffet, these savory rolls with sandwich bread are super crunchy on the outside and very soft inside. You can cook them in an air fryer (they turn out golden and light!) or in a pan, if you prefer a more “rustic” touch.
The combination of bacon and zucchini is top-notch, but you can customize them with spreadable cheese, provola, mozzarella, or spices. They are also ideal for recycling sandwich bread or the classic white loaf that you already have at home, which I always have left over.

Ingredients
- 2 slices sandwich bread
- 1 zucchini
- 3.5 oz provola cheese
- 6 slices bacon (streaky)
Steps
Flatten the bread with a rolling pin without pressing too hard.
Slice the zucchini, washed and dried, with a vegetable peeler and place the slices on the bread, add the streaky bacon and provola cheese in pieces.
Roll up well and cut into 4 pieces.
At this point, you can cook in a pan with a bit of oil and closed lid for a few minutes or in an air fryer for 6-7 min at 356°F
