Brioche Croissants with Cream

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp fresh yeast
  • 2 tbsp butter
  • 1 egg
  • 1/2 cup milk
  • 1/2 lemon zest
  • 2 tbsp sugar
  • 1 cup custard

Steps

  • Dissolve the yeast in the milk and pour it into a bowl, add some flour, the sugar, and the egg, work the dough.

  • Add the softened butter in pieces, lemon zest, more flour, and a pinch of salt, work again and add the rest of the flour, knead well.

  • Make a ball and let it rest in a bowl covered with plastic wrap until it doubles, about 4 hours.

  • After the time has passed, roll out the dough on a floured surface and make a kind of pizza, then cut a cross, mark the diagonals to get 8 triangles.

  • Fill in the center, on the widest part, with the custard then roll starting from the base and roll, curve the tips inward.

  • Place the croissants on the tray lined with paper and let them rest for 20 minutes.

  • Preheat the oven to 356° F then bake and cook for 15-20 minutes.
