The recipe was born by chance from a phone conversation with my friend Rossella: I have to make brioche donuts, how should I fill them? By thinking about what I had in the fridge, these were born and they are delicious.

Of course, if you don’t like some ingredient, just remove it from the filling, or you can replace the almonds with walnuts, which are equally good, making an autumn dessert with apples that is a bit different from usual.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/4 tsp fresh yeast
  • 1 egg
  • 1/4 cup sugar
  • 1/6 cup almonds
  • 1 tbsp pine nuts
  • 1/6 cup raisins
  • 5.3 oz apple
  • 1 lemon zest
  • 2 tbsp butter
  • 1/3 cup milk

Steps

  • Soak the raisins in rum or water.

  • Pour the flour into a bowl, add the sugar, crumbled yeast, butter cut into pieces, washed and patted dry raisins, lemon zest or vanilla, and mix.

  • Chop the almonds and add them to the dough, add the pine nuts, cut the apple and add it, mix, add a pinch of salt, and the milk.

  • Knead the ingredients well, do a fold turn, that is, create a rectangle without rolling the dough with a rolling pin, bring the short side to the center and cover with the other short side.

  • Form a ball and let it rest until it doubles in size, about 3 hours.

  • After the time has passed, take the dough and divide it into 7 pieces, make balls, then stretch them from below to pierce them in the center with your fingers to form the donuts.

  • Gradually place the donuts on a tray lined with paper and let them rest for 20 minutes.

  • Preheat the oven to 356°F (180°C), put them in the oven, and bake in the hot oven at 356°F (180°C) for 10-15 minutes.
