- 5 oz smooth escarole
- 10 black olives
- 2 tablespoons pine nuts

I used leftover escarole, anyway, wash the escarole and boil it for about 5 minutes, just enough to wilt it, then drain all the water well.
Season with pitted olives, pine nuts, salt, and mix.
Roll out the dough with a rolling pin and cut with a 4-inch cookie cutter, stuff with the filling, a slice of provola cheese, and close in half.
Seal the edges and bake at 356°F for about 10-12 minutes or in the fryer at 392°F for 8 minutes, turning them.
