Ingredients

  • 2 rolls puff pastry
  • 8.8 oz pre-cooked cotechino
  • 7.1 oz cooked lentils (you can also use canned ones)
  • grated parmesan cheese (optional)

Steps

I first cooked the lentils in sauce, you can use pre-cooked ones and sauté them in a pan with chopped carrot, celery and a bit of tomato paste, garlic or onion for 15 minutes.

  • Cook the lentils with chopped celery, carrot, and onion, then rosemary and bay leaf, water or broth, a teaspoon of tomato paste, and continue cooking for 30-40 minutes.

  • Mash coarsely the lentils with a fork: they should be creamy but not liquid.

  • Cook the cotechino according to the instructions, generally 30 minutes in its casing in a pot covered with water, let it cool.

  • Mix lentils, cotechino, parmesan, and pepper.

  • Unroll the pastry and cut it into rectangles (about 4×5 inches).

  • Place a heaping teaspoon of filling in the center of each rectangle.

  • Roll up the pastry to form a cylinder and close like a candy by tying the ends.

  • Place on a baking tray with parchment paper, brush with egg yolk and milk.

  • Static oven: 350°F for about 15 minutes, they should be golden and crispy.
