Ingredients
- 10.5 oz potatoes
- 1 oz smoked provola cheese
- 0.7 oz cherry tomatoes
- 1 egg
- 1 tbsp Parmigiano Reggiano DOP
Preparation
Peel and cut the potatoes into chunks, then boil and drain them, mash them with a potato masher, and collect the puree in a bowl.
Season with salt and pepper to taste, add the Parmigiano and mix well, then divide the mixture into 3 or 4 parts and form oval-shaped small pizzas.
Beat an egg in a plate with a fork and coat the crostini, then roll them in breadcrumbs.
Cook in a pan with a little oil, turning them with the lid closed.
