This version of the Carnival castagnole with alchermes originates from the classic recipe, but with that extra touch that makes them different from the usual. After frying, they are dipped in the liqueur and then rolled in sugar: the result is a luscious, fragrant, and super delicious treat.
The recipe for alchermes castagnole is very simple and can also be prepared by hand, without any special tools. In no time, you’ll serve one of the most beloved fried Carnival desserts, perfect alongside chiacchiere, doughnuts, and fritters.

- Difficulty: Very easy
- Cost: Very cheap
- Preparation time: 15 Minutes
- Portions: 2-3
- Cooking methods: Frying
- Cuisine: Italian
- Seasonality: Carnival
Ingredients
- 3/4 cup flour (the one you usually use)
- 2 tbsps butter
- 1 tbsp sugar
- 1 egg
- Half teaspoon baking powder
- 1 pinch vanillin (or vanilla-flavored baking powder)
- lemon zest
- alchermes
Steps
Work the butter with sugar in a mixer or food processor.
Add the egg, mix, and then add the grated lemon peel.
Combine the flour, a pinch of salt, and with the processor still running, add the baking powder and vanillin.
Then take the dough and make balls about the size of a walnut; I made a cross on top.
Fry them in plenty of hot oil and drain on kitchen paper.
Put some alchermes in a bowl and let the castagnole rest a bit so they soften and take on color, then roll them in granulated sugar.
Bon appétit

👉 Smart tip: don’t leave them in the alchermes for too long, just a quick dip to flavor them without making them too soft.
👉 Even children love them: if you want, you can use a lighter soaking or dilute the alchermes.
👉 Even tastier: serve them warm, just rolled in sugar.
