Ingredients
- 4 Chicken thighs
- 2 tablespoons Salted capers
- leaves Bay
- Rosemary
- Extra virgin olive oil
- 10.5 oz Canned cherry tomatoes
Preparation
Place the cherry tomatoes in a pot or in the baking dish.
Drizzle with oil, add the desalinated capers, 2 bay leaves, and a few sprigs of rosemary.
Let it cook a bit, then add the chicken thighs and cook with the lid closed for about 30 minutes.
I usually don’t like to dredge the meat, but if you dredge and brown them in the pan before adding them to the seasoning, they’re tastier.
If you bake them, set the temperature to 356°F for 30-40 minutes.
