Chicken with Vegetables in a Skillet

CHICKEN WITH VEGETABLES IN A SKILLET, an easy and quick main course perfect for lunch or dinner that you can make in no time with vegetables, light and tasty.

The chicken with vegetables is also perfect for diets, a white meat dish accompanied by a mix of seasonal vegetables. I used what I had in the fridge.

The recipe to prepare the chicken with vegetables is very simple, you brown the chicken first, then the vegetables, and combine them to cook further, really good and light, perfect for diets too.

If there is a dish that my children are crazy about, it is chicken with potatoes, but yesterday I wanted to enrich it with other ingredients and thought of adding more vegetables, it was excellent.

Ingredients

  • 2 chicken thighs (with drumsticks)
  • Half red bell pepper
  • 1.76 oz broccoli
  • 2.12 oz pumpkin
  • Half onion
  • 2 tbsps canned cherry tomatoes
  • 2 potatoes

Preparation

  • Wash and pat the chicken dry with paper towels, brown both sides in a skillet, then remove from the skillet and set aside.

  • Wash and clean the vegetables, peel the potatoes, then cut them into pieces and slice the onion.

  • Put the onion in a skillet or pan, sauté and add the vegetables, let them sauté a bit in the skillet.

  • Add the chicken, the cherry tomatoes, and a bit of water if needed.

  • Cook with the lid closed or open, as you prefer, for about 30 minutes, ensuring the vegetables do not burn.
