Ingredients
- 1 2/3 cups All-purpose flour
- 1/2 packet Baking powder
- 2 tbsps Sugar
- 1.8 oz Ricotta
- 1 egg
- 2 tbsps dark chocolate chips
- lemon zest (grated)
Preparation
Pour the flour with the baking powder, grated lemon zest, and sugar into a bowl or into a food processor, but it’s easy to work by hand.
Add the egg, ricotta, and chocolate chips and knead everything together.
If the dough is too sticky, add a little more flour but do not overdo it.
It should be like a soft shortcrust pastry.
Take a portion the size of a walnut and form into balls.
Heat the oil in a deep pot and cook the castagnole, they should be nicely golden.
Drain on kitchen paper and then dust with powdered sugar.
