FAQ (Questions and Answers) CHOCOLATE SPORCAMUSS
What are Chocolate Sporcamuss?
Sporcamuss are puff pastry sweets traditionally filled with custard, but in the chocolate version, they are filled with chocolate cream or ganache, and served warm or lukewarm, often dusted with powdered sugar.
What type of chocolate cream is used for filling?
You can use a chocolate custard, a soft ganache or even a spreadable cream like Nutella if you want a quicker preparation. The cream must be dense so it doesn’t ooze too much during cooking.
Can I prepare them in advance?
Yes, you can pre-bake the puff pastry squares and store them in the fridge. The filling should be done just before serving to prevent the pastry from losing its crispness.
