Ingredients
- 3 slices pandoro
- 14 oz mascarpone
- 1/2 cup sugar
- 2 tablespoons instant coffee
- 2/3 cup whipping cream, 35% fat
Steps
Cut the slices of pandoro in half lengthwise to get 6 small slices.
Place 2 slices of pandoro on a serving plate, moisten with a bit of milk or coffee, place a 6-inch tall cake ring and remove the excess pandoro. My cake is 7 inches, the filling amount is for an 8-inch cake.
Whip the cream with mascarpone, instant coffee, and sugar to obtain a softer cream. If you prefer, you can prepare moka coffee, 4-6 tablespoons will be fine.
Fill with the first layer of cream, then make a layer of pandoro, and repeat until the ingredients are finished. Finally, decorate using a pastry bag with a star nozzle.
Put the cake in the freezer for 30 minutes or in the fridge for an hour.
