- 17.6 oz Green beans
- 17.6 oz Potatoes
- 4 San Marzano Tomatoes
- 5.3 oz Arugula
- 1.8 oz Green olives
- to taste White wine vinegar
- to taste Extra virgin olive oil
- to taste Salt

Preparation
Clean the green beans by removing the ends, wash them well and boil them until they change color.
Wash the potatoes well and boil them, let them cook until the fork easily pierces the potato or use a pressure cooker.
When the potatoes are cooked, drain the water, cool them under cold running water, peel them and cut them into pieces.
Drain the green beans and place them in a salad bowl, add the chopped tomatoes, olives, and washed and drained arugula.
Wash some salad leaves, curly and iceberg, cut them and add them to the rest of the ingredients.
Add the potatoes, oil, a few tablespoons of white or balsamic vinegar, salt to taste, and mix well.
