Ingredients
- 2 eggs
- 5.3 oz sugar
- 1.6 cups all-purpose flour
- 1 tbsp instant coffee (optional)
- 1/4 cup coffee (from the moka)
- 2.8 oz ricotta
- 1 1/2 packet baking powder
- 0.7 oz chocolate chips
Preparation
Prepare the coffee and let it cool, you will need about an espresso cup.
Beat the eggs with the sugar until they turn white and fluffy, add the flour with the baking powder and the instant coffee if using, a little at a time.
Add the ricotta and coffee, mix well with the electric whisk and add the chocolate chips
Pour the mixture into a greased and floured 7-8 inch ring mold and bake in a preheated oven at 350°F for 20-25 minutes.
