I made them on a Sunday afternoon, when you crave something good but don’t want to mess up the kitchen: few ingredients, one bowl, and the aroma of almonds and coffee fills the house.
The coffee drops are soft pastries inside and slightly crunchy outside, sweet to the right point and perfect to accompany coffee or a cup of cappuccino. They are ideal after lunch or dinner, but also as a small homemade gift for Christmas: they keep for days in a tin box and stay delicious as if freshly made.
They are gluten-free, so suitable even for those with intolerances, and the coffee aroma makes them irresistible, one of those clever recipes that make you look good with minimal effort.

Ingredients
- 4.5 oz almonds
- 1 egg white
- 1 tsp instant coffee
- 4.2 oz sugar
- powdered sugar
Steps
Chop the almonds with a blender.
Place them in a bowl, add the sugar, the instant coffee, then mix and add the egg white, mixing with a spoon.
Form balls with your hands, roll them in powdered sugar, and pinch them on top to form a sort of peak.
Place the coffee drops on a baking tray lined with parchment paper and bake at 338°F for 12-15 minutes.
