The coffee pavesini cake with chocolate mousse is a simple and delicious dessert with a coffee-scented whipped cream filling, great after lunch or dinner, perfect as a Sunday or summer party dessert.
The recipe for the coffee pavesini cake was made quickly yesterday; I had some leftover chocolate cream from another dessert, so I made a layer with coffee and finished with another chocolate layer.
The cake is soft, creamy, and enveloping, definitely caloric, ok, the swimsuit test is gone for this year, we’ll think about it next year.

Ingredients
- 4 packs pavesini (small packs)
- 1 cup heavy cream
- 3.5 oz chocolate
- 1.7 oz coffee
- 1 cup coffee
- 2.5 oz chocolate

Steps
The recipe is for an 18 cm mold; if you want to make it with a 22 cm mold, use almost double the amount.
For the dessert, I used some of the cream and chocolate left from the cake HERE which looks like stracciatella or visibly has chocolate pieces.
Melt the chocolate with milk and let it cool, also prepare the coffee and let it cool.
Prepare a mixture of water and coffee to soak the cookies, keep a small cup aside.
Whip part of the cream with the cold chocolate, another part with coffee, and another with the other chocolate and coffee which should be more liquid.
Quickly soak part of the cookies and arrange them on the bottom of a springform pan lined with plastic wrap, then place those around, overlapping them gradually.
Make the first layer, then the second and third, alternating the fillings, dust with cocoa and keep in the freezer for 1 hour.
